I don't do much whitewater, I prefer water tourism, so I'm not familiar with some words, but at least something:
asekuracja - záchrana, jištění
brzeg (rzeki) - břeh (řeky)
bystrze - peřej
chyżka - rozhraní
cofka - vracák
człowiek żaba - "žabák"
deszcz - déšť
dopływ - přítok
drzewo - strom
eskimoska - eskymák, eskymácký obrat

NOTE: as far as I know, in Poland, "kajak" is used both for kayak (

what I am missing - except the abovementioned differentiation between kayak and canoe, and also paddle and oar :-) -
as for "odwój" - if I understand correctly, "odwój (jako wracająca woda)" does not have a direct translation into Czech (you may translate "wracająca woda" = "vracející se voda"), but there's one thing called "vývar" in Czech, which is different from "válec", because the water does not form the cylindric shaped rotating body, but its effect is nearly the same - it just holds the object and does not allow it to float away
katarakta - katarakt ... it's on the wiki but not in the słowniczek
as for "kabina" - as far as I understand the article, basically you mean the situation when the boat is upside down ... this is quite special for whitewater and I do not know of any other widely used word than the abovementioned "krysa", or "vykrysit" as the act of leaving the boat - but in water tourism, there are words used far more often like "cvaknutí" (noun) and "cvaknout se" (verb), "vykoupat se" (literally "to take a bath"), "otočit se" (to capsize), "udělat ponorku" (to submerge below the surface without capsizing)
surface - hladina
whirlpool - vír
"bílá voda" - literally "white water", but the meaning is water with lot of airbubbles in it, thus decreasing density, making it very hard to float
